Whole Baked Rainbow Trout with Oregano & Lemon Pepper Salt

Ingredients

2 Angelakis Whole Rainbow Trout

2 Lemons, sliced thin

1 Clove Garlic

6 Sprigs Fresh Thyme

Sea Salt

Olive Oil

Lemon Pepper Salt

2 tsp Lemon Zest

2 tbls SeaSalt

1 tsp Cracked Black Pepper

Method

METHOD

Preheat oven to 180℃

Pat trout dry with paper towel, open the cavity and place the lemon slices, garlic, oregano leaves and a sprinkle of sea salt. Place the remaining lemon slices on a tray lined with baking paper, lay the trout on top. Drizzle with olive oil and sprinkle the top of the fish with a little sea salt.

Place in the trout in the oven and bake for 30 minutes, serve with a simple green salad, boiled potatoes and lemon pepper salt.

To make the lemon pepper salt, In a small bowl, add the lemon zest, sea salt & black pepper, mix gently to combine.
