Preparing Mussels

  • Discard any mussels with open shells.
  • Use kitchen scissors to cut away the 'beard'.
  • If the mussels are muddy, use a kitchen brush to clean. Most of the mussels farmed in Australia are clean shell, and just need a rinse after cutting off the beard.
