You Need: (Serves 4)
- 1 pack Garlic Prawns
- 3-4 tablespoons olive oil
- 2-3 tablespoons white wine/ brandy
- 185ml tin evaporated milk
- 1 cup green beans, frozen, sliced, lightly cooked in boiling water
- 2 cups broccoli florets, frozen, lightly cooked in boiling water
- 700g buttery, mashed potato
Method:
- Add chopped green vegetables to mash potato with salt and pepper and mix to combine
- Add a dash of milk to mash if too dry
- heat oil in a large fry pan, med-low heat
- Gently fryprawns in a single layer 1-2 minutes each side until just turned pink
- Add wine/brandy and allow to bubble up approximately 30 seconds
- Add evaporated milk and simmer 1 minute, stirring
- Serve creamy garlic prawns with green mash
Suggestions: Make Surf and Turf for 6 by topping cooked fillet steaks with creamy garlic prawns. Serve with mixed leaf saland and jacket potatoes
