Thai Hot & Sour Soup

You Need:

  • 1 packet Prawn & Calamari Medley
  • 2-3 spring onions (tops)
  • 200g straw mushrooms
  • bunch coriander
  • bunch basil
  • 1-2 tablespoons red eschalots/sliced
  • 6 cups stock/water
  • 4 tablespoons tom yum paste

Method:

  1. Bring stock/water to the boil and add the tom yum paste
  2. Add prawns and mushrooms and cook for no more than 1 minute until just pink
  3. Add calamari for 15 seconds and remove from heat
  4. Divide between bowls and top with fresh herbs, red eschalots and spring onions.
