You Need:
- 1 packet Prawn & Calamari Medley
- 2-3 spring onions (tops)
- 200g straw mushrooms
- bunch coriander
- bunch basil
- 1-2 tablespoons red eschalots/sliced
- 6 cups stock/water
- 4 tablespoons tom yum paste
Method:
- Bring stock/water to the boil and add the tom yum paste
- Add prawns and mushrooms and cook for no more than 1 minute until just pink
- Add calamari for 15 seconds and remove from heat
- Divide between bowls and top with fresh herbs, red eschalots and spring onions.
