You Need: (Serves 2-4)
- 1 packet Salt & Pepper Squid
- cooking oil
- Lime & Sweet Chilli Mayonnaise:
- 2 tablespoons whole egg mayonnaise
- 1 tablespoon sweet chilli sauce
- 1 teaspoon lime juice
- Thai-Style Dipping Sauce:
- 2 tablespoons soy sauce
- 2 tablespoons rice wine vinegar
- 1 teaspoon eshallot, finely diced
- chopped chilli and chives to taste
- 1 tablespoon water
Method:
- Shallow fry Salt & Pepper squid in 1 1/2 cups of hot cooking oil for 1-2 minutes in a wok until golden or deep fry at 180C degrees for 1-2 minutes until golden
- Drain on absorbent paper before serving
- Combine all ingredients of each dip, adjusting flavourings to taste
- Serve both dipping sauces on a platter with Salt & Pepper Squid
