You Need:
- 1 pack Marinara Seafood
- extra virgin olive oil
- 4 slices bruschetta (toasted, Italian bread rubbed lightly with fresh garlic)
- 1 punnet grape or baby roma tomatoes, quartered
- flat leaf parsley, chopped
- black olives, sliced
- salt & pepper to taste
Method:
- Heat large, oiled, heavy-based fry pan or barbecue plate, med-low
- Scatter seafood in a single layer and fry 1-2 minutes each side until golden- don't over cook
- Remove from heat, combine with remaining ingredients and ad extra splash of oil in a bowl, then season to taste
- Serve over bruschetta
Suggestions: Substitute Marinara Seafood with Garlic Prawns or Chilli Garlic Calamari. Add feta cheese.
