Bruschetta Marinara

You Need:

  • 1 pack Marinara Seafood
  • extra virgin olive oil
  • 4 slices bruschetta (toasted, Italian bread rubbed lightly with fresh garlic)
  • 1 punnet grape or baby roma tomatoes, quartered
  • flat leaf parsley, chopped
  • black olives, sliced
  • salt & pepper to taste

Method:

  1. Heat large, oiled, heavy-based fry pan or barbecue plate, med-low
  2. Scatter seafood in a single layer and fry 1-2 minutes each side until golden- don't over cook
  3. Remove from heat, combine with remaining ingredients and ad extra splash of oil in a bowl, then season to taste
  4. Serve over bruschetta

Suggestions: Substitute Marinara Seafood with Garlic Prawns or Chilli Garlic Calamari. Add feta cheese.
