Seafood Stir-Fry

You Need:

  • 1 pack of Seafood Medley
  • 250g hokkien noodles, separated in hot water
  • 16 snowpeas, sliced
  • 4 spring onions, cut into quarters
  • 1 small carrot, cut into matchsticks
  • 2 cups bean sprouts
  • 1/2 cup peanuts
  • 1 cup mint and coriander leaves
  • 2 tablespoon ginger, grated
  • 1 tablespoon garlic, minced
  • 4-5 tablespoons hoisin sauce
  • 3-4 tabslepoons lime juice

Method:

  1. Heat a little oil in a large wok over med-high heat
  2. Quickly stir-fry vegetables with ginger and garlic for 30 seconds
  3. Reduce heat and add seafood, stirring 1 minute
  4. Add noodles then hoisin mixing to combine and warm through
  5. Season with lime juice and garnish with peanuts and fresh herbs to serve

Suggestions: Try with prepared rice noodles instead of egg noodles. Add fresh chilli with ginger and garlic to taste.
