You Need:
- 1 pack of Seafood Medley
- 250g hokkien noodles, separated in hot water
- 16 snowpeas, sliced
- 4 spring onions, cut into quarters
- 1 small carrot, cut into matchsticks
- 2 cups bean sprouts
- 1/2 cup peanuts
- 1 cup mint and coriander leaves
- 2 tablespoon ginger, grated
- 1 tablespoon garlic, minced
- 4-5 tablespoons hoisin sauce
- 3-4 tabslepoons lime juice
Method:
- Heat a little oil in a large wok over med-high heat
- Quickly stir-fry vegetables with ginger and garlic for 30 seconds
- Reduce heat and add seafood, stirring 1 minute
- Add noodles then hoisin mixing to combine and warm through
- Season with lime juice and garnish with peanuts and fresh herbs to serve
Suggestions: Try with prepared rice noodles instead of egg noodles. Add fresh chilli with ginger and garlic to taste.
