Garfish: with Lime & Caper Butter Sauce

You Need: (Serves 4-6)

  • 18 garfish fillets
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons lime juice
  • 1 tablespoon chopped fresh thyme (optional)
  • cracked black pepper
  • 2 tablespoons salted baby capers, rinsed
  • 100g unsalted cultured butter



Combine the olive oil, lime juice, thyme and a generous amount of pepper in a shallow, non-metallic dish. Add the garfish fillets and turn to coat in the mixture. Set aside for 5 minutes.

Heat a large frying pan, drain the fish fillets and cook in the hot pan for 1-2 minutes on each side or until just cooked through. remove the fish from the pan and keep warm. Reduce the heat, add the remaining marinade, the capers and butter and cook just until the butter turns a nutty brown colour.

Place the garfish fillets onto serving plates, drizzle with the sauce and serve at once.
