You Need: (Serves 4)
- 400g cockles, cleaned
- 200ml dry white wine
- 1 bay leaf
- 80g butter
- 50g Italia parsley
- 4 sprigs lemon thyme
- 50g chopped chives
- 2 cloves garlic, thinly sliced
- 10g white pepper
Method:
Heat up a saucepa until hot. Add cockles, wine, garlic, pepper, thyme and bay leaf; cover and cook for 3 minutes.
Finish off with parsley, chives and butter.
Serve immediately.
