Cockles: Steamed in White Wine & Mixed Herbs

You Need: (Serves 4)

  • 400g cockles, cleaned
  • 200ml dry white wine
  • 1 bay leaf
  • 80g butter
  • 50g Italia parsley
  • 4 sprigs lemon thyme
  • 50g chopped chives
  • 2 cloves garlic, thinly sliced
  • 10g white pepper

 

Method:

Heat up a saucepa until hot. Add cockles, wine, garlic, pepper, thyme and bay leaf; cover and cook for 3 minutes.

Finish off with parsley, chives and butter.

Serve immediately.
