You Need: (Serves 4-5)
- 1.5kg mussels, scrubbed and beards removed
- 165g butter
- 3 teaspoons chopped fresh thyme
- 1 tablespoon lemon juice
- 1/2 cup finely chopped parsley
- salt and pepper to taste
Method:
Combine butter with thyme, lemon juice, parsley and salt and pepper.
Heat a hot plate and place mussels directly on plate. As they start to open, spoon a little butter mixture into mussels. When fully open, remove mussels to a platter.
Heat remaining butter mixture and serve as a dip.
