You Need: (Serves 4)
- 500g raw bug meat (approx 1.5kg whole bugs)
- 1 tablespoon brown sugar or honey
- 1/2 tablespoon ground chilli powder or 1 hot chilli, finely chopped
- 1 tablespoon oil
- freshly chopped parsley
- 1 tablespoon butter
Method:
Combine all ingredients except the butter and marinate for 15 minutes.
Pan fry the bug meat in butter for 5-8 minutes
Serve on a bed of rice with a side salad.
This recipe can also be grilled, basting with the marinade during cooking or cooked on a barbecue.
