Barramundi: Lime Marinated

You Need: (Serves 4)

  • 4 thick barramundi fillets
  • 4 kaffir lime leaves, shredded
  • 1 fresh red chilli, chopped
  • 60ml (1/4 cup) fresh lime juice
  • 1 teaspoon sesame oil

 

Method:

Place fish in a shallow glass or ceramic dish. Scatter with lime leaves and chilli. Sprinkle with lime juice and sesame oil. Marinate, at room temperature for 5 minutes.

Heat a non-stick char-grill or frying pan over a medium heat. Drain fish. Cook for 2-4 minutes each side until flesh flakes when tested with a fork.

If lime leaves are unavailable, use some finely shredded lime rind instead
