Tommy Ruff: Mild Pepper Sauce

You Need: (Serves 4)

  • 1kg tommy ruff fillets
  • 3 rashers bacon, chopped
  • 2 red capsicums, chopped
  • 1 onion, finely chopped
  • 1 teaspoon chilli sauce
  • 1 teacup cream
  • 100g mushrooms, cut in half

 

Method:

Place ingredients, excluding tommy ruffs, into a large frying pan and cook gently for 5 minutes.

Place fish into the pan and continue cooking over a low heat, turning the fish several times. each side should take about 5 minutes to cook.

Remove fish and continue to cook sauce at a high temperature. Stir sauce constantly until thickened.

Pour sauce over fish and serve.
