You Need: (Serves 6)
- 6 whiting fillets
- 1/2 cup wholemeal flour
- 1/2 cup olive oil
- 1 tablespoon fresh herbs (dill, basil, marjoram or parsley)
- 1/2 teaspoon chilli powder or 1 chilli, chopped finely
- 2 tablespoons butter
- lemon juice
Marinate chilli and herbs in oil. Wash and dry well-cleaned whiting and coat with flour.
Heat oil and butter frypan or wok until butter is foaming.
Add the fish and fry for 10 minutes or until cooked, turning once. Squeeze juice over fish after turning and before serving.
